Method of preparation

Dough

Knead the dough for about 30 minutes or until it comes off the hands. Now, gradually add the melted butter until the dough begins to form. Knead a little more, then put the dough in a bowl greased with oil and cover. Let it rise for an hour in a warm place.

Filling

For the filling, mix the egg whites very well with the sugar and salt. Then put the milk and sugar on the fire and mix until all the sugar melts.

Add the poppy seeds and mix well until you get a homogeneous filling. Then leave to cool and gradually add the beaten egg whites.

You can also add essences or liqueur. Homogenize everything and leave to cool.

Cake formation

After the dough has risen, divide it into four equal pieces. You can do this roughly or you can weigh the four pieces. Prepare your two cake trays and line them with flour and oil or baking sheet.

After you have divided the dough into four equal parts, take a piece and spread it well on the work table on which you put a little oil. Try not to spread the dough too much because it will be too thin and the filling will come out through it.

Put a quarter of the filling then roll and tighten the ends well. When you have formed two such rolls, knit them together by tightening the edges so that the filling does not come out, then transfer them to the baking trays.

Grease them with the beaten egg yolk and sprinkle brown sugar on top.

Baking cozonacs

The oven must be well heated to 170 degrees. Put them in a pan and set the oven at 180 degrees for the first 20-30 minutes.

The tray should be about halfway through the oven. After they have risen, cover them with baking paper and, if necessary, turn them over so that they bake evenly.
