  • 1 pound thick sliced bacon, good quality
  • 1/2 cup maple syrup, Grade B
  • 1 teaspoon Dijon mustard
  • Finely ground black pepper

Preheat oven to 400 degrees F. Line a rimmed baking sheet with heavy foil. Place a baking rack over the lined sheet tray and arrange the bacon slices across the rack next to each other, not overlapping.

In bowl, whisk the maple syrup and mustard. Spoon over the top of the bacon, and bake 12 to 15 minutes. Turn the bacon over and baste with syrup mixture. Bake an additional 5 to 10 minutes until crispy. Sprinkle hot bacon with a pinch of finely ground black pepper.

That's why we were pumped to discover the new Maple Syrup Cookbook, 3rd Edition by Ken Haedrich. While he does include a few syrup-soaked indulgences, many recipes utilize just the right amount of maple syrup to evoke a subtly sweet seasonal flavor without sending blood sugar skyrocketing. 1¼ c old-fashioned rolled oats
1 c whole wheat flour
½ c unbleached all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 eggs
1 c buttermilk
½ c pure maple syrup
¼ c vegetable oil
½ c finely chopped walnuts

1. PREHEAT the oven to 400ºF. Grease a 12-cup muffin tin and set aside.
2. PROCESS the oats in a food processor or blender until they are reduced to a coarse powder it is fine if some larger flakes remain. Measure exactly 1 cup of the ground oats and combine it in a large bowl with the flours, baking powder, baking soda, and salt. Toss to mix.
3. BEAT the eggs in a separate bowl, then blend in the buttermilk, maple syrup, and oil. Make a well in the dry ingredients, pour in the egg mixture, and stir, just to blend. Fold in the walnuts. Divide the batter evenly among the muffin cups.
4. BAKE for 20 minutes, or until golden.


¼ c vegetable oil
Juice of 1 med lemon (about 2 Tbsp)
2 Tbsp pure maple syrup
1½ Tbsp Dijon mustard

3 lg green or red bell peppers
2 c cooked chickpeas (about 1 cup dried rinsed and drained if using canned)
2 Tbsp minced onion
½ c diced smoked cheddar cheese
½ c diced prosciutto or ham
Salt and freshly ground black pepper

1. FOR THE DRESSING: Whisk together the oil, lemon juice, maple syrup, and mustard in a large salad bowl. Set aside.
2. FOR THE SALAD: Roast the whole peppers on a grill, over a hot burner, or under a broiler, turning often with tongs, until the entire surface is charred. Put the peppers into a plastic bag, twist shut, and freeze for 15 minutes&mdashthis will steam off the skins. Cut out the stem ends, drain, and halve them. Remove the seeds and skins the skins should peel off readily. Slice the peppers into narrow strips.
3. TOSS the peppers into the dressing along with the chickpeas, onion, cheese, and prosciutto. Stir. Chill for several hours. Season to taste with salt and pepper before serving.


2 Tbsp butter
½ lg onion, finely chopped
2 c peeled, seeded, and diced butternut squash (¼-inch pieces)
2 c fresh or frozen corn kernels, thawed if frozen (at least partially)
¼ tsp smoked paprika or paprika
¾ c chicken broth
1 tsp Dijon mustard
Salt and freshly ground black pepper
1½ Tbsp pure maple syrup
Crumbled feta cheese for serving, optional

1. MELT the butter in a large skillet over medium heat. Add the onion and saute for 2 to 3 minutes. Stir in the squash, corn, and paprika. Cook the vegetables for 2 to 3 minutes, stirring often. Stir in the chicken broth and mustard, and add salt and pepper to taste.
2. COVER the dish and braise the vegetables until the squash is barely tender, 6 to 7 minutes. Uncover the skillet and continue to cook until virtually all of the liquid has cooked off this should take only a couple of minutes. Stir in the maple syrup. Cook for another minute, stirring pretty much nonstop so everything is evenly coated. Taste again, adding more salt and pepper, if desired.
3. TRANSFER the succotash to a serving dish and serve immediately. If you're using the cheese, put it in a small bowl and pass it at the table.


4 slices bacon
1 Tbsp butter
1 c finely chopped sweet onion
1&ndash1¼ lb Brussels sprouts, halved
½ c chicken broth
1 Tbsp Dijon mustard
Salt and freshly ground black pepper
2 Tbsp pure maple syrup

1. COOK the bacon in a large skillet until crisp. Transfer the bacon to paper towels and let cool. Tilt the skillet and spoon off all but about 2 tablespoons of the fat.
2. ADD the butter and onions to the skillet. Saute the onions over medium heat until translucent, 7 to 8 minutes. Stir in the Brussels sprouts and cook for 2 minutes, stirring occasionally. Stir in the chicken broth.
3. COVER and braise the Brussels sprouts until not quite tender, about 3 minutes. Uncover the pan, stir in the mustard, and add salt and pepper to taste. Continue to cook, uncovered, until the Brussels sprouts are tender and the liquid is reduced to a glaze, 2 to 3 minutes. Stir in the maple syrup just before taking them off the heat. Transfer to a serving plate and crumble the bacon over the top. Serve immediately.

More Maple Syrup Recipes

Maple syrup as a natural sugar can be used for breakfast toppings, candies, grilling, and salad dressing. It’s incredibly versatile and flavorful. Now that March has come around again, we can look forward to getting our hands on some of this year’s syrup harvest. So, naturally, we have some more recipes to share.

Oatmeal Raisin Camp Pancakes and Maple Syrup – Backroad Ramblers

The best way to enjoy maple syrup, for many, is to pour it over hotcakes as-is. There’s something about eating fresh maple syrup outside after cooking over an open fire or grill. Premix the pancake ingredients at home and add the wet ingredients on-site. If you’re feeling ambitious, warm up the maple syrup, too.


  • 2 cups basic camping pancake mix (store-bought or a combination of flour, sugar, baking powder, salt)
  • 2 cups water
  • 1 or 2 eggs (it’ll be a richer batter if you use two)
  • ½ cup raisins
  • 1 teaspoon cinnamon


  1. Put your basic camping pancake mix in a bowl and add the cinnamon.
  2. In another bowl, soak the raisins in 2 cups of water.
  3. Add optional eggs and beat with a mix or fork.
  4. Add the wet ingredients to the dry.
  5. Fry pancakes in a sizzling hot, oiled pan or iron skillet, and serve with maple syrup.

Smoky Chipotle Baked Beans – My Recipes

Once again, something you can whip up relatively quickly in the home kitchen and bring along to the campsite. This recipe definitely beats off-the-shelf cans of baked beans!


  • 4 center-cut bacon slices, chopped
  • 1 cup finely chopping onion
  • 2 Tablespoons soybean paste (white miso)
  • 4 cloves garlic, minced
  • ½ cup unsalted chicken stock
  • 1 ½ Tablespoons maple syrup
  • 1 Tablespoon canned chipotle chiles, chopped
  • 1 ½ teaspoons cider vinegar
  • ½ teaspoon smoked paprika
  • 3 (15-ounce) cans unsalted navy beans or Great Northern beans
  • 1 (8-ounce) can unsalted tomato sauce


  1. Preheat oven to 350 degrees.
  2. Cook bacon in a 10-inch cast-iron skillet or other ovenproof skillet over medium heat 5 minutes or until crisp, stirring occasionally. Remove bacon from pan with a slotted spoon, reserving drippings.
  3. Add onion to drippings in pan cook 4 minutes, stirring occasionally. Add miso and garlic cook 2 minutes, stirring frequently. Stir in stock and remaining ingredients bring to a simmer. Place pan in oven bake at 350° for 45 minutes or until sauce is thick. Remove pan from oven sprinkle beans with bacon.

Cider & Maple Roasted Pork Belly – Food Network

You can just as easily cook this delicious pork belly in a Dutch oven, as long as you have all the spices and other ingredients pre-mixed and pre-cut for use at the campsite. This is a far cry from a “typical” camping meal, and although those are great at times, you’ll feel like you’re eating at one of the best restaurants in town.

Lynn Crawford’s Spice Blend

  • 1 Tbsp coriander seeds
  • 1 Tbsp fennel seeds
  • 2 tsp pink peppercorns
  • ½ tsp cumin seeds
  • ½ tsp brown mustard seeds
  • 1 whole clove
  • 2 Tbsp salt
  • ½ Tbsp black pepper
  • 1 tsp ground allspice
  • ½ tsp freshly ground nutmeg
  • 2 lbs. pork belly
  • 3 sprigs thyme, roughly chopped
  • 3 sprigs rosemary, roughly chopped
  • 1 large honey crisp apple, cored and cut into 1″ slices
  • 1 large yellow onion, cut into 1″ slices
  • 1 cup chicken stock
  • 1 cup unfiltered apple cider
  • ½ cup maple syrup, grade B


Lynn Crawford’s Spice Blend

Preheat your oven to 425°F (220°C). In a sauté pan over medium heat, toast the coriander seeds, fennel seeds, peppercorns, cumin seeds, brown mustard seeds and clove for a few minutes, until fragrant. Grind the spices together and place in a small bowl. Stir in the salt, pepper, nutmeg and allspice.

It’s maple tapping season in Maine. Maple roasted Brussel sprouts with Andouille sausage and apricots

This dish has a balanced unity of flavors and textures — sweet and spicy, tender but hearty. Hearty roasted Brussels sprouts are tossed with bits of savory andouille sausage and sweet dried apricots and then finished with a maple and mustard glaze. We’re talking maple syrup for this week’s edition of Sweet & Savory Saturdays, and that makes me all sorts of excited for two very important reasons.

First, because the stuff basically runs through my veins. Not necessarily because I was born in The Great White North (I was, but my parents are both Polish immigrants so that probably makes me quite Polish), but because I once did syrup shots and I’m pretty sure there’s some left floating around in my blood stream to this very day.

We're calling on graphic designers to apply for a chance to see their work featured on a new Brit + Co and Bounty paper towel collection, set to launch in 2022.

Aside from the incredible exposure of having your illustrations on paper towels that'll be in stores across America next year, you'll also receive $5,000 for your art a scholarship for Selfmade, our 10-week entrepreneurship accelerator to take your design career to the next level (valued at $2,000) and a stand alone feature on Brit + Co spotlighting your artistry as a creator.

The Creatively You Design Competition launches Friday, May 21, 2021 and will be accepting submissions through Monday, June 7, 2021.


Who Should Apply: Women-identifying graphic designers and illustrators. (Due to medium limitations, we're not currently accepting design submissions from photographers or painters.)

What We're Looking For: Digital print and pattern designs that reflect your design aesthetic. Think optimistic, hopeful, bright — something you'd want to see inside your home.

How To Enter: Apply here, where you'll be asked to submit 2x original design files you own the rights to for consideration. Acceptable file formats include: .PNG, .JPG, .GIF, .SVG, .PSD, and .TIFF. Max file size 5GB. We'll also ask about your design inspiration and your personal info so we can keep in touch.

Artist Selection Process: Panelists from Brit + Co and P&G Bounty's creative teams will judge the submissions and select 50 finalists on June 11, 2021 who will receive a Selfmade scholarship for our summer 2021 session. Then, up to 8 artists will be selected from the finalists and notified on June 18, 2021. The chosen designers will be announced publicly in 2022 ahead of the product launch.
