Because on August 22 I turned 25 (first) summers HAPPY BIRTH DAY TO ME, I thought it would be nice to make a cake, deh ... professional defect, I just can't buy a cake when I know I can make a better one with the ingredients I want. And because it's summer and it's extremely hot outside, I thought of making a cake with white chocolate, although I like the dark one more, but dark chocolate shakes us a lot and it's not suitable for summer, and as a fruit I thought of pineapple because it is sweet and sour and because I like it very much.

Countertop ingredients:

  • 6 eggs
  • 10 tablespoons flour
  • 10 tablespoons sugar
  • 4 tablespoons oil
  • 1 sachet of baking powder

Ingredients for ganache cream:

  • 500 gr white chocolate
  • 400 ml liquid cream
  • 1 medium pineapple

RECIPE PREPARATION White chocolate and pineapple cake (video recipe):

How to make it: the first time we make the cream because it had to stay in the fridge for a few hours. Heat the liquid cream and then add the broken white chocolate. Wait until the chocolate melts, let it cool and put the cream in the fridge, preferably overnight. It can also be put in the freezer for a few hours. When the cream has hardened and mixes well until it becomes fluffy and airy.

For Countertops separate the 6 eggs, beat the egg whites well with a mixer until they harden, then add the sugar gradually until the egg whites become shiny and hard. Once mixed, mix the oil with the yolks and gradually add them over the egg whites, stirring gently from the bottom up. Finally, mix the baking powder with the flour and gradually add them over the composition of the egg whites and yolks. Mix with wide movements from bottom to top, taking care not to leave the egg whites. Put the dough in a cake pan lined with baking paper and bake the top on the right heat for 30 minutes or until a toothpick inserted in the middle of the top comes out clean. Remove the top from the form, let it cool well and cut it into 3 equal parts (see video).

Assembly: place the ring of the cake tray in a plate and place the first part of the top in it. Syrup with a little pineapple juice, put a generous layer of cream and place the pineapple pieces on top of the cream. We continue with the second part of the cake ending with the last part of the top. We keep a quarter of the cream to decorate it. Leave the cake in the fridge for at least 4 hours and decorate as you like. For my decoration version, watch the video.
