Ingredients

  • Sweet potato fries—frozen
  • Spicy black beans ( one can! )
  • Shredded cheese
  • Cilantro leaves
  • Sour Cream (optional)
  • Chutney, salsa, or pesto (optional)

Directions

Preheat oven to 400 degrees. Spread frozen sweet potatoes on an ungreased cookie sheet and bake for 20 mins.

While your fries bake heat up a can of spicy black beans

Remove baked fries and top with shredded cheese. Place the fries back in the oven for 2 minutes to melt cheese.

Top your fries with black beans, sour cream salsa verde and fresh cilantro leaves

Enjoy!

Is it healthy? Not on your life. Delicious? You bet. Keep these three ingredients on hand and you can satisfy your munchies on a moments notice.

  • 1 jar of Tostitos Salsa Con Queso Medium Cheese sauce
  • 1 jar of Trader Joe’s Spicy, Smokey Peach Salsa or your favorite brand

Directions:
Start with a microwavable dish. Spread corn chips all over so they over-lap some. Take a spoon and drizzle the cheese sauce as evenly as you can all over the corn chips.
